RedStone Diner is a coastal dining experience focused on comfort food, fresh seafood, authentic flavours, and warm guest hospitality. We serve a mix of coastal seafood, Indian mains, quick bites, beverages, thalis, and curated dining experiences for resort guests and walk-in customers.

Key Responsibilities

1. Food Quality & Taste Control

* Ensure consistent taste, portioning, and presentation of all menu items.

* Maintain high-quality preparation for:

  * Seafood dishes (Pomfret Fry, Surmai Fry, Prawns Fry, Fish Curry)

  * Chicken dishes (Chicken Sukka, Chicken Handi, Chicken Masala)

  * Vegetarian mains and snacks

  * Breakfast items and quick bites

  * Thalis and special dining experiences

* Ensure every dish leaves the kitchen at restaurant-standard quality.

2. Kitchen Operations

* Manage complete kitchen operations during service hours.

* Coordinate preparation, cooking, plating, and dispatch timing.

* Ensure smooth coordination with service staff and management.

* Maintain proper mise en place before service starts.

3. Hygiene & Food Safety

* Maintain strict cleanliness in kitchen and storage areas.

* Ensure proper seafood handling and storage.

* Monitor food freshness and expiry.

* Maintain clean uniforms, utensils, refrigerators, and cooking stations.

* Follow daily hygiene and sanitation SOPs.

4. Inventory & Cost Control

* Monitor stock usage and reduce wastage.

* Inform management about low stock levels in advance.

* Maintain proper usage of raw materials, seafood, spices, and perishables.

* Support management in controlling food cost percentage.

5. Staff Management

* Train kitchen helpers and junior staff.

* Maintain discipline and professionalism inside the kitchen.

* Ensure fast yet organized kitchen workflow during rush hours.

* Handle pressure calmly during weekends and peak occupancy.

6. Guest Experience Responsibility

* Understand that food quality directly impacts guest reviews and resort reputation.

* Ensure guests receive fresh, hot, and timely meals.

* Be open to guest feedback and improve continuously.

Required Skills

* Strong knowledge of Indian and coastal cuisine.

* Experience with seafood preparation preferred.

* Understanding of kitchen hygiene and food safety.

* Ability to manage high-pressure service environments.

* Strong discipline, cleanliness, and consistency.

* Team coordination and leadership ability.

Preferred Experience

* Experience in restaurants, resorts, cafés, or hospitality kitchens.

* Candidates with experience in coastal or seafood cuisine preferred.
