Job Description
1. Experience & Skills
* Minimum 1 year of experience in South Indian kitchen or tiffin service
* Expertise in making different types of dosa:
* Plain dosa, Masala dosa
* Rava dosa Neer dosa
* Specialty / fusion dosa (cheese, paneer, etc.)
* Strong knowledge of batter fermentation and consistency control
* Ability to handle high-volume orders during rush hours

2. Technical Knowledge
* Proper use of dosa tawa (iron & non-stick)
* Understanding of:
* Batter ratios (rice, urad dal, etc.)
* Fermentation timing based on climate (important in cities like Mumbai)
* Knowledge of preparing:
* Sambar
* Coconut chutney, tomato chutney, gunpowder chutney
* Control of flame, texture, crispiness, and plating consistency
