Role Overview

We are seeking a highly skilled and visionary Head Baker to lead our flagship artisanal bakery. The ideal candidate will be a master of functional nutrition, specializing in health-focused breads and pastries that do not compromise on flavor or texture. You will be responsible for product development, quality control, and managing a team dedicated to the "soil-to-plate" philosophy.

Key Responsibilities

Product Innovation: Develop a signature line of functional breads, including high-hydration sourdough, sprouted grain loaves, and gluten-free alternatives.

Health-Centric Pastry & Desserts: Create a range of pastries and desserts using alternative sweeteners (e.g., monk fruit, dates), cold-pressed oils, and nutrient-dense flours.

Quality Assurance : Maintain rigorous standards for crust, crumb, and fermentation profiles, ensuring consistency across all batches.

Operational Management: Oversee daily production schedules, ingredient sourcing (prioritizing organic and traceable inputs), and inventory management.

Team Leadership: Train and mentor junior bakers in advanced fermentation techniques and specialized health-baking protocols.

Compliance: Ensure the bakery operates at the highest level of food safety and hygiene standards.

Technical Qualifications

Certification: Must hold a professional certification or diploma in Baking and Pastry Arts from a recognized culinary institute.

Specialization: Proven expertise in Functional Baking (e.g., breads with added prebiotic fibers, ancient grains, or low-glycemic index profiles).

Technical Skill: Mastery of long-fermentation processes, natural levain management, and vegan/egg-free baking techniques.

Experience: Minimum of 5–8 years in a professional bakery environment, with at least 2 years in a leadership or Head Baker capacity.

Preferred Attributes

Passion for the One Health philosophy—connecting environmental health with human nutrition.

A "clean label" mindset: avoiding synthetic improvers, preservatives, or highly processed sugars.

Strong understanding of Mediterranean-style healthy baking.

Excellent communication skills for collaborating with the culinary and management teams.
